Salmon Curry Recipe
- 2-3 Salmon Filets (depends on size)
- 1 Onion
- 1 Tablespoon Curry Powder (McCormick Curry)
- 1 Cup Vegetable Stock
- 2 Teaspoon Ginger
- 2 Fresh Ripe Tomatoes
- Vegetable or Olive Oil
- 1 Lemon
- 2 cloves Garlic
- Fresh Coriander
- Cayenne, Salt & Pepper to taste (optional Chilli Powder if you want)
First of all, I recommend to skin off the salmon filets and cut it into large chunks.
We start with the most important work. The marinade of the salmon filets. So put the Salmon Filets in a bowl, then press the lemon for the juice, add a little bit salt, pepper, cayenne, and let them sit for about 15 minutes.
After that, fry the onions first. So that they have good color, then the tomatoes (diced) and now add the garlic (just short) frying.
Then add 1 cup vegetable stock, 2 teaspoonful ginger, 1 tablespoon curry powder and if you like chili powder, season the soup with salt & pepper and stir. Let them cook for about 25 mins.
Now the salmon comes into until the fish is ready. I recommend 15 to 20 mins, then it should be fine.
Finish the delicious soup with fresh coriander, serve and enjoy!
Also, very good ingredients to add are sweet potatoes, pieces of fresh spinach and also mushrooms.
If you want to add a side dish, a bowl of rice is a perfect combination to this salmon curry recipe.
